Simon's Carbonara

Serves 2-3 depending on appetite (good as a starter)
10 mins prep, 15 mins cooking.
Ingredients:
Good Virgin Olive oil (not Extra)
3 cloves of garlic - chopped
1 large onion - sliced
1 red pepper - chopped and seeded
Chesnutt mushrooms - sliced
Mixed herbs
Coarse salt and pepper
Grated cheese (optional and to taste)
2-3 slices of Parma ham - sliced
Pre cooked/baked ham - roughly sliced - grilled chicken or crayfish can also be used in addition or instead
pot of single cream (I use elmlea light)
linguine
1 large egg
Boil water for linguine, add linguine on low heat - simmer
Heat olive oil in wok or similar pan on a medium heat
add ingredients in sequence above and sauté.
Once onions have gone clear add the hams and keep moving in the pan
Taste it to ensure flavour is to your liking
Add the cream to the pan and mix in - let it simmer and reduce the cream to a thick consistency.
When the linguine is cooked to taste - (I prefer this over cooked for this meal and not Al Dente)
Drain and break egg onto pasta stirring immediately, then add this to the pan and mix together.
Serve straight from the pan to warmed plates and add cheese to taste...
Serve with a nice glass of vino :)
