Simon's Chicken Pasta

Ingredients:

6 chicken thigh skinless fillets

Bulb of fresh Garlic or equivalent

1 medium onion pasta

1 cup of frozen Peas

Fresh Parmesan

Paprika Salt & Pepper

fresh tomatoes (either small like cherry or in this case 1 large beef tom chopped up)

1/2 jar sacla red pasta pesto sauce

garlic infused olive oil

White wine

Dried tarragon

Dried Parsley

Method

  • Peel Garlic Bulb and remove skin from garlic cloves
  • Chop onion into large pieces
  • Pre heat oven dish with 2 tsp garlic infused olive oil
  • throw in chicken thighs onto the chopped onion with whole garlic cloves and pour in wine add Salt & Pepper and roast for 25-30 mins at 180 °C
  • Bring pan of salt water to boil for pasta
  • after 25-30 minutes of roasting, add tomatoes, stir and sprinkle with generous amount of paprika and add more pepper, roast for further 15-20 minutes
  • boil pasta as per instructions on packet
  • add peas to pasta and stir in
  • stir in Sacla sauce to chicken mixture
  • mix with pasta add parmesan, tarragon and parsley and stir in.
  • Leave to cool - serve cold....

Peppers can be used with Onion and Bacon lardon can be added with chicken....
